Had to miss a small class outing today because of cooking! Heh. Mom thought I woke up too late, so I had to push the cooking to the afternoon instead =( Anyway it was a blessing in disguise cos I have njd in the evening, and I'd be seeing my classmates for the many weeks more to come x_x Wasn't in quite a good mood to cook since I was rushed!Today On The Menu: Classic Minestrone Soup! Got the recipe from the net, again =) A few items I bought, apart from the basil! Left out the red pepper flakes cos i can't seem to find them either, and parmesan cheese doesn't seem appropriate to top the soup(apart from being exp, like $12+ for 100g?!, I didn't have much use for it unless I was cooking risotto!)


Chopped veggies! Feels to me like I was just in the kitchen for cooking haha!

Whole, peeled plum tomatoes, chopped! Some of the tomatoey liquid was drained away...this recipe didn't call for tomato paste so I thought that the above tomatoes would make the soup a nice red =X
Cabbage, added 2nd to last! Had to stir the lot a few times(tough when it's just so crowded!!)




Well, veggies wilt when cooked, so it was a little easier to stir in =) Boiled for about 20minutes!


Boiled up some pasta, and I admit that when I first ate it, I was a little disappointed since there wasn't enough of the tomato flavour! Best of all, it serves 6 people X_X LOL! Mom had some for dinner. This recipe is all vegetarian, and I'm glad that it didn't call for any stock, since my household keeps things simple and resorts to using those ready made stock(not too fond of them due to the high salt content & preservatives)whenever possible. Amazingly, during ninja-do...I felt more energetic O.o Did better sit-ups too! Horse stance didn't feel as tiring as it did before...hmm...and I'm finally a blue belt, with the same grade as my prev belt...! Took the class, and was a little blur with regards to the break, since we didn't sweat at all. Went home after ninja-do and ATE MORE OF THE SOUP. It tasted better!


Leftovers were kept overnight, so we had this for lunch on the following day. By now, all the flavours of rosemary & basil had been infused into the soup, so I thought it was best eaten after keeping overnight! Still, perhaps in the future I should add tomato paste...kinda prefer my minestrone to have a more pronounced tangy tomato flavour! =)
